It all starts with milk -- and not just any milk either.

 

Early in the dusky morning before dawn we hear the morning birds as we rise to feed hungry animals.   We are their servants.   Breakfast is a couple hay flakes and a mix of grains with molasses for the goats while they take turns being milked.   Two by two they jump up on the stanchion and await their turn being thoroughly washed & sanitized and then hooked up to the milk machine that rhythmically coaxes the milk and pumps it, one squirt at a time into the milk can.   The “girls” can hardly wait their turn to be milked.   Each one knows their name and listens to be called.   This is a ritual that will be repeated in the evening, and then again each morning before dawn.

Their beautiful milk, so fresh and white, is taken to the creamery at the Food Incubator Center where the real process begins – pasteurization, culturing, patience, proficiency, handiwork, molding, pressing, observing, aging, anticipating – transforming it into cheese.    Not just any cheese either.   “Farmstead” & “Artisan” handcrafted cheese from our area farm’s freshest, highest quality milk is important to you, our customers. 
"Farmstead" cheese means that the cheesemaker owns the dairy animals and makes the cheese from the milk they produce.   Farmstead cheese is the term used for the Caprine cheeses (goat) made by Deez Cheese.   Farmstead cheeses are a rare find.

Cheese making is the harmony of art and science.   Cheese is a slow food; that is, it’s developed and perfected over time.  Our cheese maker knows when the flavor is ripe and the cheese is ready.   Deez Cheese is the magical relationship between our land, our animals and our cheesemaker to produce the gift of cheese for you to enjoy.

 

​"Artisan" is a unique term that means that the milk is identified from one farm.   The rich Jersey cow milk from Alpena County and the Organic Holstein milk from Hillman are transformed into cheese.   The milk is gently handled, immediately pasteurized and transformed into cheese by hand in small batches.   The cheese is locally produced at the Food Incubator Center for NE MI Entrepreneurs.   Deez Cheese is committed to you and offers you only the best in milk selection and only the very best in cheese flavors.
